Ingredients

Step 1

Preheat oven to 400° F. Mix cookies, sugar and butter together; press on to bottom and side of a tart pan.

Step 2

Boil water in medium saucepan; add cinnamon stick and rice. Cook over medium heat for 15 minutes or until rice is soft; drain. Place rice, cinnamon, sweetened condensed milk, evaporated milk and eggs in a blender; cover. Blend well on high speed. Pour over the cookie base.

Step 3

Cover with foil and place in a water bath. Bake for 1 hour. Let cool and refrigerate for 2 hours.
