Step 1
Preheat oven to 325° F.
Step 2
Place turkey in roasting pan, breast-side-up.
Step 3
Rub turkey all over with olive oil and insert whole apple in turkey cavity. Pour 1 can evaporated milk over turkey; season with salt and pepper. Cover with foil.
Step 4
Roast for 3 ½ to 4 hours or until meat thermometer inserted into the thickest part of the thigh, without touching the bone reads 170° F or juices run clear when thigh is pierced. Let turkey rest for 30 minutes before carving. Prepare stuffing while turkey rests.
Step 5
Heat canola oil in large pan over medium-high heat. Add ground beef and ground pork; cook, stirring frequently, for about 5 minutes or until no longer pink.
Step 6
Add pecans, pistachios, cranberries, chopped apples, apricots, garlic and bouillon. Carefully pour in remaining can evaporated milk. Decrease heat to medium-low. Stir to combine.
Step 7
Cook, uncovered, for 10 minutes. Remove from heat; let rest for 10 minutes before serving.
Step 8
Carve turkey and serve with stuffing. Whole apple from cavity can be discarded.
